- The yeast is grown under carefully controlled conditions and then dried on drum dryers. (Note: the drum drying process involves spraying pasteurized cream yeast on a hot drum with a surface temperature of 300-350 F. The process produces product that is mostly beige colored particles. The process does produce small quantities of dark brown to black material from yeast that stays on the drum for more than one rotation. The darker particles cannot be removed from the product as they are the same size as the beige particles. There is no food safety concern with the darker particles as they are over dried yeast)
