This product is a concentrated lactic acid bacteria culture blend designed for direct inoculation into milk. It is highly concentrated, free-flowing, and deep-frozen in pelletized form (DSF), making it easy to add directly to the vat for cheese production. The acronym CP stands for cheese pasta filata, and it consists of a blend of specially selected strains of streptococcus thermophilus.

    Indicative Dosage

    Pizza Cheese Typical target pH at cooker/stretcher: 5.2 ± 0.5

    1 unit / 1000 liters (2275 lbs.) (depending on conditions)

    Fermentation time from coagulant addition to cooker/stretcher will be set by the dairy to fit process parameters and target composition and functionality.
    The CP-200 series is ideally suited for the production of many types of pasta filata cheeses including classical Italian, fresh, pizzas and string cheese.
    Specific functionalities can be further enhanced by the addition of selected adjuncts from the DSM portfolio.

    Laboratory results with typical pizza cheese temperature profile (35°C for 70 minutes then 43°C)

    General Recommendations for use:

    **Do not thaw pouches of pellets prior to use**
    Frozen culture in pouches thaws quickly, minimize exposure time outside of frozen conditions.
    It is very important that the entire package of pellets is used all at once.
    Due to varying densities of the pellets, these packages do not contain uniform blends so use of partial packages may result in inconsistent product performance.
