SALIGUARD ULTIMA II is a natural broad-spectrum antimicrobial blend in powder form consisting of gluconolactone (from the microbial fermentation of corn), which has chelating and hydrating benefits, and potassium sorbate (a food-grade preservative). Gluconolactone and potassium sorbate act as efficient preservatives. Gluconolactone works by slowly releasing gluconic acid over time, which helps contribute to preservation. Potassium sorbate is a preservative with bacteriostatic and fungistatic properties under acidic conditions (pH should be 6 or below). Calcium gluconate is added at a very low level as an inert flow agent. Gluconolactone is reported to stabilize potassium sorbate against discoloration and darkening in aqueous solutions and may be useful in stabilizing sorbic acid in the water phase of a product.
